With the arrival of summer comes the bounty of summer fruits and vegetables. There’s are few things more satisfying than serving that perfectly ripened, crunchy corn, or biting into that juicy tomato. Luckily, Chef Rollins’ has a summertime salsa to share with you. This summertime classic can be eaten with almost anything. Serve it as a snack with tortilla chips or with grilled chicken or fish as a refreshing summertime meal.
Chef Rollins’ Corn and Avocado Summer Salsa
Preptime: 20 minutes
- 2 cups of diced tomatoes
- 1 cup of fresh corn, cooked shucked, and cut off the cob (can substitute canned kernel corn)
- 1 avocado, sliced
- 1/2 cup of finely chopped cilantro
- 1 tbsp of small diced red onion
- 1/2 cayenne pepper
- salt to taste
- 2 tbsp of olive oil
- 1 tbsp of white wine vinegar
- Juice of 1 lime
Combine the dressing ingredients in a glass jar with a lid and shake well. Combine all the salsa ingredients (except the avocado) in a bowl and mix well. Pour over the dressing and toss to coat, then add the avocado and toss gently.
